Bunny Pancakes

Easter will be here in 2 weeks, so I’m sharing this super cute and super easy bunny pancakes recipe. Your kiddos will be wowed and so will their bellies.

My daughter celebrated her birthday a little over a week ago. She loves being in the kitchen, so we have a few kids cookbooks. In one of her favorite cookbooks, there was a recipe for banana bunny pancakes. Well, she isn’t a huge banana fan, so I ignored the recipe, but used the bunny inspiration to whip up the cutest birthday breakfast for my princess. I shared a sneak peek on Instagram, and since many of you liked how they turned out, I hope my tips today help you recreate these adorable pancakes for your little ones (or even yourself).

I’ve made this recipe a few times already because it’s been an instant hit in our house. One time, I used Aunt Jemima pancake mix, another time I used Birch Benders Keto mix (great low carb option), and I also made my own pancake mix, too. Feel free to use whatever mix you’d like or you can follow along to make homemade mix.

PANCAKE MIX INGREDIENTS

1 cup of flour

1/3 cup almond flour

1/3 cup coconut flour

1/2 tablespoon coconut sugar

1/2 teaspoon baking soda

1 tablespoon of sugar (or Swerve granular sugar replacement for a low carb alternative)

1/8 teaspoon vanilla

1 egg

Cinnamon

1/2 cup of milk or buttermilk

* makes 2 - 3 bunny pancakes

ADDITIONAL INGREDIENTS

Butter

1 banana

Fruit of your choice

Chocolate morsels

Coconut flakes or marshmallows

Sprinkles (optional)

Syrup

Olive oil

DIRECTIONS

1. Pour dry ingredients (all 3 types of flour, both sugars, baking soda) into a bowl and mix with a whisk. (Skip this step and go to step 4 if you are using box pancake mix)

2. Add 1/2 cup of milk to dry mix bowl. Mix together.

3. Add 1 egg, a couple sprinkles of cinnamon, and the 1/8 teaspoon of vanilla to the mix. If the mix isn’t smooth or the right consistency add a little more milk, a 1/4 teaspoon at a time, so that the mix doesn’t become too thin, which will result in too thin pancakes. Let your mix sit for a few minutes.

4. Butter your entire griddle or skillet and add a couple drops of olive oil.

5. Using a spoon, drop pancake mix in the pan to begin forming the bunny shapes. You should be making 1 small pancake for the head, 1 larger pancake for the body, 2 narrow pancakes for the ears, and 2 very small pancakes for the feet.

6. Flip pancakes once the bottom is brown and crispy edges have formed.

7. Once the other side is browned, plate your bunny pancakes on a flat plate.

8. Cut 2 thin banana circles and place in the center of the bunny feet. Add 3 chocolate morsels below the banana.

9. Add coconut flakes or marshmallows to the larger pancake to form the bunny tail.

10. Add fruit, syrup and any decorations on the plate to the side of the bunny. Serve your kiddos and watch them enjoy! Make yourself a plate to enjoy, too.
