Heart Shaped Strawberry Shortcakes

Strawberry Shortcake is my favorite dessert! I believe I first fell in love with it years ago thanks to the Cheesecake Factory. I love that their version features a cake biscuit, with strawberries galore, whipped cream and vanilla ice cream. If you’ve never had it, you owe it to yourself to try it.

Last year, I purchase the kids an awesome cookbook for young chefs here. I love that the cookbook features appetizers, lunch options, dinner and dessert, too. I was thrilled when I saw they had a strawberry shortcake recipe that reminded me of the Cheesecake Factory’s version. The kids and I enjoy it so much that we’ve made it several times.

As a fun Valentine’s activity, we tried our hand at tweaking and making the recipe our own, with lots of love infused. Not only was our dessert the cutest thing ever, but it also tasted so good. Grab the details below, so you can try it yourself.

Ingredients:

1 cup of flour

1 teaspoon of baking powder

1/2 teaspoon baking soda

1 large container of fresh strawberries

1/8 teaspoon of salt

1/2 cup of buttermilk

4 tablespoons of unsalted better

Pam Non-Stick Cooking Spray

1/4 teaspoon vanilla extract

4 tablespoons of sugar

Whipped Cream

Recipe:

1) Preheat oven to 425 degrees

2) In a bowl, mix together dry ingredients (baking powder, flour, baking soda, salt, 1 tablespoon of the sugar)

3) Mix together buttermilk, vanilla extract and melted butter. Pour mixture into dry ingredients bowl and mix together with rubber spatula.

4) Use a 1/3 measuring cup (sprayed with Pam) to scoop batter onto your ungreased baking sheet. Should be 4 to 5 scoops total to make 4 to 5 shortcakes. Form each scoop by hand into the shape of a heart. Sprinkle each biscuit with sugar and bake in the oven for 14 - 15 minutes.

5) While the biscuits are cooking, wash your strawberries, cut the tops and slice them into two. Put half of the strawberries in one bowl, and the other half in another. Sprinkle 1 1/2 tablespoons of sugar into each strawberry bowl. For one of the bowls, use a masher to mash strawberries.

6) Once the biscuits are done, let them cool.

7) To assemble the perfect heart shaped strawberry shortcake, first place the biscuit in the center of the plate. Add a heart shaped strawberry in the center of the biscuit (you can use a sharp knife to cut the strawberry). Next, fill a heart shaped cookie cutter above the biscuit with whipped cream, and lift the cookie cutter — heart shaped whipped cream should now appear. Lastly, add crushed and uncrushed strawberries to your plate, along with a scoop of vanilla ice cream. Voila, enjoy!
